Dessert
6 3/4 oz all purpose flour (1 1/2 cups)
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2 1/2 cups old fashioned oats
8 oz unsalted butter, slightly softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 eggs beaten lightly
1 Tbs honey
2 tsp vanilla
6 oz dried cranberries
5 oz chopped pecans
Preheat oven to 350
Line pans with parchment
Mix dry ingredients, then str in oats. Set aside
Beat butter with sugars until light and fluffy. Beat in the eggs then scrape the bowl. Add honey and vanilla and beat until blended.
Add the flour in two additions, beating until blended.
Stir in cranberries and pecans
Bake or freeze.
Bake 9 to 11 minutes until center are soft and no longer look wet.
